As each event is uniquely designed, we don’t offer set menus, however, the examples below showcase the style of what we can create for your occasion.

PRIVATE DINNER EXAMPLE menus
MENU ONE:
Blue Swimmer Crab Toast canapés, seared scallops with nduja butter, grass-fed Wagyu ribeye, crispy rosemary roast potatoes, heirloom tomato salad, stracciatella with figs and berries.
Menu Two:
Cured trout gravlax on potato rosti, kingfish and cucumber crudo, grilled Murray cod with blistered cherry tomatoes, blanched asparagus with blood orange and hazelnuts, Eton mess with seasonal fruit

Cocktails:
Signature and classic cocktails, including Tommy’s Margaritas, Negronis, coastal-inspired martinis and spritzes.
Wines:
Paired wines from exceptional Australian vineyards, or flowing champagne, complete the perfect day in the sun.
